What's the simplest first thing to do with an unused Pi

I bought a Raspberry Pi a while back and it's been sitting in a drawer ever since. I keep telling myself I'll set it up, but every guide seems to start in a different place and I end up closing the tab. I think I need a microSD card and a power supply, but I'm not sure what else.

If you had to pick one thing for a total beginner to do with it first, what would it be? Is it better to put the normal desktop version on it and just poke around, or go straight to a version with no screen? And do I need to buy anything extra before I start, or can I do it with a Windows laptop at work level skills?
